Mediterranean Pasta Salad

A delicious and easy to make Mediterranean pasta salad with turkey bacon.

Ingredients

  • 8 ounces penne pasta
  • 4 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions, then drain and rinse under cold water.
  2. In a skillet, cook the turkey bacon until crispy, then crumble it into pieces.
  3. In a large bowl, combine the pasta, turkey bacon, cherry tomatoes, cucumber, red onion, feta cheese, olives, and parsley.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine before serving.

Notes

  • For added flavor, let the salad chill in the refrigerator for an hour before serving.
  • You can substitute regular bacon for turkey bacon for a different taste.
