- 8 ounces penne pasta
- 4 slices turkey bacon
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup kalamata olives, sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Cook the pasta according to package instructions, then drain and rinse under cold water.
- In a skillet, cook the turkey bacon until crispy, then crumble it into pieces.
- In a large bowl, combine the pasta, turkey bacon, cherry tomatoes, cucumber, red onion, feta cheese, olives, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the salad and toss to combine before serving.
Notes
