Mary Berry Honey Roasted Carrots and Parsnips

  • 500 grams carrots, peeled and cut into sticks
  • 500 grams parsnips, peeled and cut into sticks
  • 4 tablespoons honey
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, combine the carrots and parsnips.
  3. Drizzle with honey and olive oil, and season with salt and pepper.
  4. Toss until well coated.
  5. Spread the vegetables on a baking tray in a single layer.
  6. Roast for 30-35 minutes until golden and tender, stirring occasionally.
