Maple Mustard Pork Tenderloin with Caramelized Onions

  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 2 large onions, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix maple syrup and Dijon mustard. Brush this mixture over the pork tenderloin.
  3. In a skillet, heat olive oil over medium heat and add the sliced onions, cooking until caramelized.
  4. Season the pork with salt and pepper and sear it in the same skillet for about 2-3 minutes on each side.
  5. Transfer the pork to the oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
  6. Let the pork rest for 5 minutes, then slice and serve with caramelized onions.
