Lentil Minestrone

A hearty and comforting soup packed with lentils and turkey bacon.

Ingredients

  • 1 cup lentils
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • 2 cups spinach, chopped

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and crumble.
  2. Add onions, carrots, and celery to the pot; sauté until softened.
  3. Stir in garlic and cook for another minute.
  4. Add lentils, broth, diced tomatoes, and Italian seasoning; bring to a boil.
  5. Reduce heat and simmer until lentils are tender, about 30 minutes.
  6. Stir in spinach and crumbled bacon; cook for an additional 5 minutes.

Notes

  • For a vegetarian option, omit turkey bacon.
  • This soup freezes well; store in an airtight container.
