  • 2 stalks lemongrass
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 teaspoons sugar
  • 1 teaspoon garlic, minced
  • 8 ounces rice noodles
  • 1 cup bean sprouts
  • 1 cucumber, julienned
  • 1 carrot, shredded
  • 1/4 cup fresh cilantro
  • 1/4 cup chopped peanuts

Instructions

  1. Prepare the lemongrass by removing the tough outer layers and finely mincing the tender part.
  2. In a bowl, combine minced lemongrass, soy sauce, fish sauce, sugar, and garlic.
  3. Marinate the chicken breasts in the mixture for at least 30 minutes.
  4. Cook the rice noodles according to package instructions and set aside.
  5. Grill or pan-cook the marinated chicken until fully cooked.
  6. Slice the chicken and assemble the bowls by adding noodles, chicken, and fresh veggies.
