  • 2 cups crushed graham crackers
  • 1/2 cup melted butter
  • 16 ounces cream cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large bowl, mix together crushed graham crackers and melted butter, then press into the bottom of a springform pan.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well.
  4. Stir in lemon juice and lemon zest until fully combined.
  5. Gently fold in the blueberries.
  6. Pour the cheesecake mixture into the prepared crust.
  7. Bake for 50-60 minutes or until the center is set.
  8. Allow to cool to room temperature, then refrigerate for at least four hours before serving.

Notes

  • For a swirl effect, reserve some blueberries and press them into the top of the cheesecake before baking.
  • Serve with whipped cream for an extra touch.
