  • 4 oz mozzarella cheese

  • 1/4 cup olive oil
  • 1/2 lb prosciutto

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine rice and water in a pot, bring to a boil, then cover and simmer for 20 minutes.
  3. Remove from heat and let sit for 10 minutes.
  4. Mix vinegar and salt, then fold into rice.
  5. Lay out rice on a bamboo mat, then layer with mozzarella, sun-dried tomatoes, and basil.
  6. Roll tightly and slice into bite-sized pieces.
  7. Drizzle with olive oil and top with prosciutto before serving.
