- 1 cup rice
- 2 cups chicken broth
- 1 pound chicken thighs
- 4 strips turkey bacon
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup frozen peas
- Set the Instant Pot to sauté and cook the turkey bacon until crispy. Remove and set aside.
- In the remaining fat, sauté the onion and garlic until fragrant.
- Add the chicken thighs and brown on both sides.
- Stir in the rice, broth, paprika, salt, and pepper.
- Close the lid, set to high pressure, and cook for 10 minutes.
- Once done, quick-release the pressure, then stir in the peas and crumble the bacon on top.
Notes
- For added flavor, try marinating the chicken beforehand.
- Feel free to substitute brown rice but adjust the cooking time.
