  • 1 cup rice
  • 2 cups chicken broth
  • 1 pound chicken thighs
  • 4 strips turkey bacon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen peas

Instructions

  1. Set the Instant Pot to sauté and cook the turkey bacon until crispy. Remove and set aside.
  2. In the remaining fat, sauté the onion and garlic until fragrant.
  3. Add the chicken thighs and brown on both sides.
  4. Stir in the rice, broth, paprika, salt, and pepper.
  5. Close the lid, set to high pressure, and cook for 10 minutes.
  6. Once done, quick-release the pressure, then stir in the peas and crumble the bacon on top.

Notes

  • For added flavor, try marinating the chicken beforehand.
  • Feel free to substitute brown rice but adjust the cooking time.
