Ingredients

Scale
  • 2 acorn squashes
  • 3 tablespoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces goat cheese
  • 1/2 cup cranberries
  • 1 tablespoon orange juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squashes in half and remove the seeds.
  3. In a bowl, mix honey, salt, and pepper. Brush the mixture onto the cut sides of the squash.
  4. Place the squash halves on a baking sheet and roast in the oven for about 30-35 minutes, or until tender.
  5. While the squash is roasting, prepare the cranberry drizzle by combining cranberries and orange juice in a small pot over medium heat. Cook until the cranberries burst and the mixture thickens.
  6. Remove the squash from the oven, and fill them with goat cheese. Drizzle with the cranberry sauce before serving.

Notes

  • Serve warm for the best taste.
  • You can substitute goat cheese with feta for a different flavor.
