- 2 acorn squashes
- 3 tablespoons honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces goat cheese
- 1/2 cup cranberries
- 1 tablespoon orange juice
- Preheat your oven to 400°F (200°C).
- Cut the acorn squashes in half and remove the seeds.
- In a bowl, mix honey, salt, and pepper. Brush the mixture onto the cut sides of the squash.
- Place the squash halves on a baking sheet and roast in the oven for about 30-35 minutes, or until tender.
- While the squash is roasting, prepare the cranberry drizzle by combining cranberries and orange juice in a small pot over medium heat. Cook until the cranberries burst and the mixture thickens.
- Remove the squash from the oven, and fill them with goat cheese. Drizzle with the cranberry sauce before serving.
Notes
- Serve warm for the best taste.
- You can substitute goat cheese with feta for a different flavor.
