  • 1 cup orzo pasta
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup sun dried tomatoes, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh basil, chopped
  • 1/4 cup red onion, finely chopped

Instructions

  1. Cook the orzo pasta according to package instructions. Drain and set aside to cool.
  2. In a large bowl, combine the olive oil, lemon juice, salt, and black pepper.
  3. Add the cooked orzo, sun dried tomatoes, feta cheese, basil, and red onion to the bowl.
