9 sheets lasagna noodles
2 cups ricotta cheese
2 cups spinach, cooked and chopped
2 cups marinara sauce
1 cup mozzarella cheese, shredded
1 cup mushrooms, sliced
1 zucchini, sliced
1 bell pepper, diced
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
Instructions
Preheat the oven to 375°F (190°C).
Cook the lasagna noodles according to package instructions; drain and set aside.
In a mixing bowl, combine ricotta cheese, spinach, Italian seasoning, salt, and pepper.
Spread a layer of marinara sauce on the bottom of a baking dish.
Layer 3 lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the mushrooms, half of the zucchini, and half of the bell pepper.
Repeat the layers, finishing with a final layer of noodles, marinara sauce, and topping with mozzarella cheese.
Bake for 45 minutes until the cheese is bubbly and golden.
Let it cool for 10 minutes before slicing and serving.
Notes
For extra protein, you can add cooked lentils or cottage cheese to the ricotta mixture.
Serve with a side salad for a complete meal.
