Gruyere Cheese Fondue

Ingredients

  • 200 grams Gruyere cheese
  • 100 grams Emmental cheese
  • 1 cup dry white wine
  • 1 clove garlic
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 tablespoon kirsch (cherry brandy)
  • Freshly ground black pepper to taste
  • Fresh nutmeg to taste

Instructions

  1. Rub the inside of a fondue pot with the garlic clove.
  2. In a separate pot, heat the white wine and add the grated Gruyere and Emmental cheese slowly, stirring constantly.
  3. Once the cheese is melted and smooth, mix the lemon juice with the cornstarch and add to the pot, stirring until thickened.
  4. Stir in the kirsch, pepper, and nutmeg.
  5. Transfer to the fondue pot over a flame to keep warm.
  6. Serve with cubed bread and vegetables for dipping.

  • For a richer flavor, let the cheese mixture stand for a few minutes before serving.
