Greek Spaghetti Bolognese with Turkey Bacon and Fresh Herbs

- 8 ounces turkey bacon
- 1 pound spaghetti
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 ounces) crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- Cook the turkey bacon in a large skillet over medium heat until crispy.
- Remove the bacon and set aside. In the same skillet, add olive oil, onions, and garlic; sauté until soft.
- Add crushed tomatoes, oregano, salt, and pepper to the skillet; stir well.
- Simmer for 15 minutes, then add bacon back to the skillet.
- Meanwhile, cook spaghetti according to package instructions; drain and set aside.
- Combine spaghetti with the sauce, add fresh parsley, and serve hot.
Notes
- For a vegetarian version, omit turkey bacon and use lentils.
- Fresh herbs can be substituted with dried herbs (1/3 of the amount).
