  • 1 red bell pepper, cut into squares
  • 1 zucchini, sliced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a bowl, mix olive oil, lemon juice, oregano, and a pinch of salt.
  3. Cut the halloumi cheese into cubes and add to the marinade, stirring gently.
  4. Thread the halloumi, red bell pepper, and zucchini onto skewers, alternating between each ingredient.
  5. Brush the skewers with the remaining marinade.
