Gourmet Tiramisu Yule Log Cake

A luxurious and festive take on the classic tiramisu, this Yule log cake is perfect for holiday celebrations.

Ingredients

  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup heavy cream
  • 8 oz mascarpone cheese
  • 1 cup brewed espresso, cooled
  • 2 tbsp coffee liqueur
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup unsweetened cocoa powder, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper.
  2. In a bowl, beat the eggs and granulated sugar until pale and fluffy.
  3. Gently fold in the flour and cocoa powder until combined.
  4. Spread the batter evenly in the prepared pan and bake for 15 minutes.
  5. While the cake is baking, whip the heavy cream until soft peaks form.
  6. In another bowl, mix the mascarpone with espresso, coffee liqueur, powdered sugar, and vanilla extract.
  7. Once the cake is baked, carefully roll it up in the parchment paper and let it cool.
  8. Unroll the cake and spread the mascarpone mixture evenly, then re-roll the cake without the parchment.
  9. Chill in the fridge for at least 2 hours before serving.
  10. Dust with cocoa powder before slicing and serve.

Notes

  • Serve with additional whipped cream if desired.
  • Wrap tightly in plastic wrap for leftovers.
