Gluten Free Pumpkin Muffins (High Protein)

  • 1/2 cup pumpkin puree
  • 1/2 cup protein powder
  • 1/2 cup honey
  • 1/4 cup coconut oil, melted
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, combine the gluten-free flour, protein powder, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the pumpkin puree, honey, melted coconut oil, and eggs.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fill the muffin tins about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow to cool before removing from the tin.
