- 1/2 cup pumpkin puree
- 1/2 cup protein powder
- 1/2 cup honey
- 1/4 cup coconut oil, melted
- 2 eggs
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, combine the gluten-free flour, protein powder, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the pumpkin puree, honey, melted coconut oil, and eggs.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fill the muffin tins about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool before removing from the tin.
