French Onion Beef Stew

  • 2 pounds beef chuck, cut into cubes
  • 6 slices turkey bacon, chopped
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups sliced mushrooms
  • 2 carrots, sliced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon thyme
  • 2 bay leaves
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Remove turkey bacon and set aside. In the same pot, add onions and garlic, sauté until onions are translucent.
  3. Add beef cubes to the pot and brown on all sides.
  4. Add mushrooms, carrots, beef broth, Worcestershire sauce, thyme, bay leaves, salt, and pepper. Bring to a boil.
  5. Reduce heat, cover, and simmer for 2 hours or until beef is tender.
  6. Stir in the cooked turkey bacon before serving.

Notes

  • For a thicker stew, add a slurry of cornstarch and water in the last 10 minutes of cooking.
