- 2 pounds beef chuck, cut into cubes
- 6 slices turkey bacon, chopped
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 cups sliced mushrooms
- 2 carrots, sliced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon thyme
- 2 bay leaves
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
- In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
- Remove turkey bacon and set aside. In the same pot, add onions and garlic, sauté until onions are translucent.
- Add beef cubes to the pot and brown on all sides.
- Add mushrooms, carrots, beef broth, Worcestershire sauce, thyme, bay leaves, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 2 hours or until beef is tender.
- Stir in the cooked turkey bacon before serving.
Notes
- For a thicker stew, add a slurry of cornstarch and water in the last 10 minutes of cooking.
