Instructions

  1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a large bowl, mix together the pumpkin puree, sugar, eggs, and vanilla until smooth.
  3. In a separate bowl, combine the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Spread the batter evenly in the prepared pan and bake for 15-20 minutes.
  6. While the cake is baking, prepare a clean kitchen towel and sprinkle it with powdered sugar.
  7. Once baked, immediately invert the cake onto the prepared towel and gently peel away the parchment paper.
  8. Starting from one end, roll the cake with the towel and let it cool completely.
  9. For the filling, beat the cream cheese, butter, powdered sugar, and vanilla until smooth.
  10. Unroll the cooled cake, spread the cream cheese filling evenly, and re-roll the cake without the towel.
  11. Chill for at least one hour before slicing and serving.
