Instructions

  1. Preheat the oven to 350°F (175°C).

  3. Press the mixture into the bottom and sides of mini tart tins.
  4. Bake for 15 minutes until lightly golden. Remove from oven and let cool.
  5. In another bowl, whisk together lemon juice, eggs, granulated sugar, and lemon zest.
  6. Pour the lemon mixture into the cooled tart shells.
  7. Bake for an additional 20 minutes or until the filling is set. Let cool.
  8. To make the meringue, beat the egg whites and cream of tartar until soft peaks form.
  9. Gradually add granulated sugar and beat until stiff peaks form.
  10. Spread the meringue over the cooled tarts and use a kitchen torch to lightly brown the top.
