Easy Sweet, Spicy, and Saucy Noodles (Vegan)

Ingredients

  • 8 ounces rice noodles
  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon chili paste
  • 1/2 cup bell peppers, sliced
  • 1/2 cup carrots, julienned
  • 1/4 cup green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Cook the rice noodles according to package instructions.
  2. In a large skillet, heat sesame oil over medium heat.
  3. Add bell peppers and carrots, stir-frying for 3-4 minutes.
  4. Mix soy sauce, maple syrup, and chili paste in a bowl, then pour over the vegetables.
  5. Add the cooked noodles and toss to combine.
  6. Garnish with green onions and sesame seeds before serving.

Notes

  • Adjust the spiciness by adding more or less chili paste.
  • For extra flavor, add tofu or your choice of protein.
