Easy Crockpot Chicken Taco Soup Recipe

  • 1 pound boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup chopped onions
  • 1 cup bell peppers, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (optional)

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the chicken broth, black beans, corn, diced tomatoes, taco seasoning, onions, bell peppers, and garlic.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. Once cooked, shred the chicken with two forks and stir back into the soup.
  6. Serve hot and top with shredded cheese if desired.
