Double Layer Vegan Brookies

Ingredients

  • 1 cup almond flour
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup maple syrup
  • 1/2 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dairy-free chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, mix almond flour, all-purpose flour, cocoa powder, baking powder, and salt.
  3. In another bowl, whisk together maple syrup, melted coconut oil, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed. Fold in the chocolate chips.
  5. Pour half of the batter into the prepared baking pan.
  6. Spread a layer of your favorite vegan cookie dough on top.
  7. Finish with the remaining brownie batter on top of the cookie dough.
  8. Bake for 25-30 minutes, or until a toothpick comes out mostly clean.
  9. Allow to cool before cutting into squares.

Notes

  • For an extra indulgence, add nuts or additional chocolate chips on top before baking.
  • Serve warm with a scoop of dairy-free ice cream for an ultimate treat.
