  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup almond milk
  • ½ cup coconut oil, melted
  • 2 teaspoons vanilla extract
  • 2 tablespoons maple syrup

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a mixing bowl, combine the chopped dates and almond milk. Let it sit for 10 minutes to soften.
  3. In another bowl, whisk together the dry ingredients: flour, cocoa powder, baking soda, and salt.
  4. Pour the date mixture into the dry ingredients. Add melted coconut oil, vanilla extract, and maple syrup. Mix until just combined.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before transferring to wire racks.

  • For a richer taste, add a pinch of espresso powder to the batter.
