- 1 cup unsweetened cocoa powder
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup almond milk
- ½ cup coconut oil, melted
- 2 teaspoons vanilla extract
- 2 tablespoons maple syrup
- Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a mixing bowl, combine the chopped dates and almond milk. Let it sit for 10 minutes to soften.
- In another bowl, whisk together the dry ingredients: flour, cocoa powder, baking soda, and salt.
- Pour the date mixture into the dry ingredients. Add melted coconut oil, vanilla extract, and maple syrup. Mix until just combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring to wire racks.
