Ingredients

  • 1 can corn
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 bell peppers, chopped
  • 1 tablespoon cumin
  • 1 teaspoon chili powder
  • 4 cups vegetable broth
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in the crockpot.
  2. Add onion and garlic; sauté until softened.
  3. Stir in bell peppers, black beans, corn, diced tomatoes, cumin, chili powder, salt, and black pepper.
  4. Pour in vegetable broth and lime juice; mix well.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Adjust seasoning before serving.

Notes

  • This soup can be garnished with tortilla chips, avocado, and cilantro.
  • For extra heat, add some diced jalapeños.
