  • 2 pounds boneless, skinless chicken thighs
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 dried guajillo peppers
  • 2 dried ancho peppers
  • 2 cups chicken broth
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a blender, combine the guajillo and ancho peppers with chicken broth. Blend until smooth.
  2. In the Crockpot, add the chicken thighs, onion, garlic, spices, and the blended pepper sauce.
  3. Cover and cook on low for 6-8 hours or until chicken is tender.
  4. Shred the chicken with forks and mix it back into the sauce.
  5. Warm the tortillas in a pan or microwave. Fill each tortilla with the chicken mixture.
  6. Garnish with cilantro and serve with lime wedges.

Notes

  • For added flavor, marinate the chicken in the spices and sauce overnight before cooking.
  • Serve with a side of consomme for dipping.
