Crock Pot Chicken Pot Pie Soup

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 slices turkey bacon
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 1 small onion, chopped
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream

Instructions

  1. In a crock pot, add the chicken breasts, turkey bacon, diced carrots, celery, potatoes, and onion.
  2. Pour in the chicken broth and add the garlic powder, thyme, and black pepper.
  3. Cover and cook on low for 6-8 hours or until the chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the pot.
  5. Add in the frozen peas and heavy cream, stir well, and cook for an additional 30 minutes.

Notes

  • For extra richness, consider adding a splash of white wine.
  • This soup can be thickened with a cornstarch slurry if desired.
