  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 pound cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent.
  2. Stir in garlic and Italian seasoning; cook for an additional minute.
  3. Add shredded chicken and chicken broth; bring to a boil.
  4. Reduce heat and stir in heavy cream and broken lasagna noodles. Simmer until noodles are tender.
  5. Drop spoonfuls of ricotta cheese into the soup and sprinkle with mozzarella and Parmesan.
  6. Season with salt and pepper. Serve hot.
