Creamy Tomato Bisque Soup Recipe

A creamy and delicious tomato bisque soup with a twist of turkey bacon flavor.

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cans (28 ounces) crushed tomatoes
  • 1 cup vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon sugar
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add turkey bacon and cook until crispy. Remove and crumble.
  3. In the same pot, sauté onions and garlic until soft.
  4. Add crushed tomatoes, vegetable broth, basil, and sugar. Bring to a simmer.
  5. Blend the soup until smooth. Return to pot.
  6. Stir in heavy cream and crumbled bacon. Season with salt and pepper.
  7. Serve hot.

Notes

  • For a vegan version, omit cream and use coconut milk.
  • Serve with crusty bread for a delightful meal.
