Creamy Street Corn Pasta Salad

A deliciously creamy pasta salad that features sweet corn and crispy turkey bacon, perfect for summer gatherings.

Ingredients

  • 8 ounces pasta of your choice
  • 2 cups cooked corn (fresh or frozen)
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large bowl, combine cooked corn, turkey bacon, cherry tomatoes, and red onion.
  3. In a separate bowl, mix together sour cream, mayonnaise, lime juice, chili powder, salt, and pepper.
  4. Add the pasta to the corn mixture and pour the dressing over it. Toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
