  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon (zested and juiced)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • 1 cup chicken broth
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large pot, heat olive oil over medium heat.
  3. Season the chicken with salt, pepper, lemon zest, and minced garlic.
  4. Place the chicken in the pot and sear until golden brown on all sides.
  5. Add the lemon juice, fresh herbs, chicken broth, and heavy cream to the pot.
  6. Cover and transfer the pot to the oven.
  7. Roast for 1 hour or until the chicken reaches an internal temperature of 165°F (74°C).
  8. Remove from the oven, let it rest for 10 minutes before serving.
