  • 1 cup heavy cream
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, sauté onion, garlic, carrots, and celery until softened.
  2. Add diced tomatoes, vegetable broth, and quinoa; bring to a boil.
  3. Reduce heat and stir in Italian seasoning. Simmer for about 15 minutes.
  4. Stir in heavy cream and cook for an additional 5 minutes.
  5. Season with salt and pepper. Serve warm.
