  • 2 cups cooked chicken, shredded
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 4 cups chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (corn) drained
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese for topping

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
  2. Stir in the shredded chicken, enchilada sauce, and chicken broth.
  3. Add black beans, corn, cumin, chili powder, salt, and pepper; stir well.
  4. Bring to a simmer and let cook for 15 minutes.
  5. Stir in the heavy cream and let simmer for another 5 minutes.
  6. Serve hot, topped with shredded cheese.

Notes
