- 2 cups cooked chicken, shredded
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (10 oz) enchilada sauce
- 4 cups chicken broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (corn) drained
- 1 cup heavy cream
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheese for topping
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
- Stir in the shredded chicken, enchilada sauce, and chicken broth.
- Add black beans, corn, cumin, chili powder, salt, and pepper; stir well.
