Cranberry Apple Quinoa Salad

A refreshing and healthy salad combining the tartness of cranberries with the sweetness of apples and the nutritious benefits of quinoa.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup fresh cranberries
  • 1 apple, diced
  • 1/4 cup red onion, diced
  • 1/4 cup chopped walnuts
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • salt to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a saucepan, combine quinoa and water; bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes until water is absorbed.
  4. Let quinoa cool, then fluff with a fork.
  5. In a large bowl, combine cranberries, apple, red onion, walnuts, and parsley.
  6. Add the cooled quinoa to the bowl.
  7. In a small bowl, whisk together olive oil, apple cider vinegar, honey, and salt.
  8. Pour dressing over the salad and toss to combine.
  9. Serve chilled or at room temperature.
