Cozy Roasted Vegetable Butternut Squash Lasagna

  • 1 large butternut squash
  • 2 cups spinach
  • 2 cups ricotta cheese
  • 1 cup mozzarella cheese
  • 2 cups marinara sauce
  • 9 lasagna noodles
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 pinch salt and pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the butternut squash in half and remove the seeds. Place it cut side down on a baking sheet and roast for 30-40 minutes until tender.
  3. In a bowl, mix ricotta cheese, spinach, garlic powder, Italian seasoning, and a pinch of salt and pepper.
  4. Once the squash is cool, scoop out the flesh and mix it with the ricotta mixture.
  5. Spread a thin layer of marinara sauce on the bottom of your baking dish.
  6. Layer 3 lasagna noodles, followed by half of the butternut squash mixture, a layer of marinara sauce, and a sprinkle of mozzarella cheese.
  7. Repeat layers, ending with noodles topped with marinara sauce and remaining mozzarella cheese.
  8. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until bubbly.
  9. Let it cool for a few minutes before serving.
