- 2 cups spinach
- 2 cups ricotta cheese
- 1 cup mozzarella cheese
- 2 cups marinara sauce
- 9 lasagna noodles
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 pinch salt and pepper
- Preheat your oven to 400°F (200°C).
- Cut the butternut squash in half and remove the seeds. Place it cut side down on a baking sheet and roast for 30-40 minutes until tender.
- In a bowl, mix ricotta cheese, spinach, garlic powder, Italian seasoning, and a pinch of salt and pepper.
- Once the squash is cool, scoop out the flesh and mix it with the ricotta mixture.
- Spread a thin layer of marinara sauce on the bottom of your baking dish.
- Layer 3 lasagna noodles, followed by half of the butternut squash mixture, a layer of marinara sauce, and a sprinkle of mozzarella cheese.
- Repeat layers, ending with noodles topped with marinara sauce and remaining mozzarella cheese.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until bubbly.
- Let it cool for a few minutes before serving.
