Cozy One-Pot Seafood Stew Bursting with Ocean Flavors

  • 1 pound shrimp, peeled and deveined
  • 1 pound mussels, cleaned
  • 1 pound clams, cleaned
  • 2 cups fish stock
  • 1 cup white wine
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium potatoes, diced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until they are translucent.
  2. Add the diced potatoes, fish stock, white wine, thyme, paprika, salt, and pepper. Bring to a boil.
  3. Once boiling, reduce the heat and let it simmer for about 15 minutes or until the potatoes are tender.
  4. Add the shrimp, mussels, and clams to the pot. Cook until the seafood is cooked through and the shells have opened.
  5. Serve hot, garnished with fresh parsley.
