Ingredients

  • 8 ounces mushrooms, sliced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions and garlic, sauté until soft.
  3. Stir in mushrooms and cook until browned.
  4. Add chicken broth, thyme, salt, and pepper; bring to a boil.
  5. Add the chopped rotisserie chicken and kale, simmer for 10 minutes.
