Coconut Cream Pancakes Recipe

These Coconut Cream Pancakes are fluffy and rich, paired perfectly with crispy turkey bacon for a delicious breakfast treat.

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup coconut milk
  • 1/4 cup unsweetened shredded coconut
  • 1 large egg
  • 2 tablespoons melted coconut oil
  • 4 slices turkey bacon

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, combine coconut milk, shredded coconut, egg, and melted coconut oil.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Heat a non-stick skillet over medium heat and grease lightly.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook for 2-3 minutes or until bubbles form on the surface, then flip and cook until golden brown.
  7. In a separate pan, cook turkey bacon until crispy.
  8. Serve pancakes warm with turkey bacon on the side.

Notes

  • For extra coconut flavor, top with coconut whipped cream.
  • These pancakes also freeze well; just reheat in a toaster or microwave.
