  • 1 cup pumpkin puree
  • 1 cup sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking powder

  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ground ginger
  • ½ cup chopped nuts (optional)
  • ½ cup streusel topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix the pumpkin puree, sugar, brown sugar, and oil until well combined.
  3. Add the eggs, and mix until smooth.
  4. In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  5. Gradually add the dry ingredients to the wet ingredients until just combined.
  6. If using, fold in the chopped nuts.
  7. Pour the batter into the prepared loaf pan and sprinkle the streusel topping over the top.
  8. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool before drizzling with maple glaze.
