Classic French-Style Potato Salad

A delightful twist on the traditional potato salad, featuring crispy turkey bacon and a creamy dressing.

Ingredients

  • 2 pounds small potatoes
  • 4 slices turkey bacon
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 cup chopped fresh parsley
  • 1/4 cup diced celery
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Boil the potatoes in salted water until tender. Drain and let cool.
  2. Cook the turkey bacon until crispy, then chop into pieces.
  3. In a large bowl, mix together mayo, Dijon mustard, vinegar, salt, and pepper.
  4. Add the cooled potatoes, chopped bacon, parsley, and celery. Toss to coat.
  5. Chill in the refrigerator for at least 30 minutes before serving.
