Chicken Pot Pie with Biscuits

  • 1 cup frozen peas and carrots
  • 1/2 cup celery, chopped
  • 1/2 cup onion, chopped
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1 cup chicken broth
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 package refrigerated biscuit dough

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large skillet, melt the butter over medium heat. Add the onion and celery, and cook until softened.
  3. Stir in the flour, then gradually add the chicken broth and milk. Cook until the mixture thickens.
  4. Mix in the chicken, peas, carrots, salt, pepper, and thyme.
  5. Transfer the mixture to a baking dish.
  6. Top with biscuit dough and bake for 20-25 minutes or until the biscuits are golden brown.
