Chicken Paprikash

A delicious twist on the classic chicken paprikash, featuring tender chicken simmered in a rich, flavorful sauce.

  • 2 pounds chicken thighs
  • 2 tablespoons paprika
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups chicken broth
  • 1 cup sour cream
  • salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and sauté until translucent.
  2. Stir in garlic and bell pepper, cooking for another 2 minutes.
  3. Add chicken thighs and cook until browned on all sides.
  4. Sprinkle paprika over the chicken, stirring to coat evenly.
  5. Pour in diced tomatoes and chicken broth, then bring to a simmer.
  6. Cover and cook for about 30 minutes, or until the chicken is cooked through.
  7. Stir in sour cream, then season with salt and pepper to taste. Serve hot.
