  • 2 pounds baby potatoes
  • 1 cup heavy cream
  • 3 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat and sear the chicken breasts until golden brown on both sides.
  3. Add minced garlic and thyme to the skillet, cooking for an additional minute.
  4. Transfer the chicken to a baking dish, and add baby potatoes around the chicken.
  5. In a bowl, mix the heavy cream and Dijon mustard, then pour it over the chicken and potatoes.
  6. Season with salt and pepper, then cover the dish with foil.
  7. Bake in the preheated oven for 30-35 minutes, until the chicken is cooked through and potatoes are tender.
  8. Remove foil and broil for an additional 5 minutes for a nice golden top.
