- 1 cup cherries, pitted and chopped
- 3/4 cup amaretto liqueur
- 2 cups mascarpone cheese
- 1 1/2 cups heavy cream
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 package ladyfinger cookies
- 1/4 cup cocoa powder for dusting
- In a mixing bowl, combine the cherries and amaretto. Set aside to marinate for 30 minutes.
- In another bowl, beat the mascarpone cheese, heavy cream, sugar, and vanilla until smooth and creamy.
- Dip each ladyfinger quickly into the amaretto mixture and layer in a dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Add half of the marinated cherries on top.
- Repeat the layers with the remaining ladyfingers, mascarpone mixture, and cherries.
- Cover and refrigerate for at least 4 hours or overnight.
- Before serving, dust with cocoa powder.

- For a non-alcoholic version, substitute amaretto with cherry juice.
