  • 1 cup shredded cheese
  • 2 cups mixed vegetables (such as spinach, bell peppers, and carrots)
  • 1 package phyllo dough
  • 1/2 cup melted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine the mixed vegetables, cheese, garlic powder, salt, and pepper.
  3. Lay out a sheet of phyllo dough and brush it with melted butter.
  4. Place another sheet on top and brush with butter again.
  5. Spoon the vegetable mixture at one end and roll tightly.
  6. Place on a baking sheet and repeat with remaining sheets and filling.
  7. Brush rolls with butter and bake for 25-30 minutes until golden brown.
  8. Allow to cool slightly and serve warm.
