Cheddar Broccoli Potato Soup

A warm and hearty soup perfect for chilly nights featuring creamy potatoes, fresh broccoli, and sharp cheddar.

  • 2 cups diced potatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until onions are translucent.
  2. Add chopped broccoli and diced potatoes, stir for a few minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer until vegetables are tender.
