- 4 pieces chicken thighs
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 2 cups chicken broth
- 1 tablespoon grated ginger
- 3 cloves garlic, minced
- 1 tablespoon vegetable oil
- 1 cup rice
- 2 cups water
- 1 tablespoon scallions, chopped
- In a bowl, marinate the chicken thighs with soy sauce and brown sugar for at least 30 minutes.
- In a pot, heat oil over medium heat and sauté garlic and ginger until fragrant.
- Add the marinated chicken and sear on both sides until golden brown.
- Pour in chicken broth and bring to a boil, then reduce heat and simmer for 25 minutes.
- While the chicken cooks, rinse the rice under cold water. In another pot, combine rice and water, bring to a boil, then cover and simmer for 18 minutes.
- Serve the chicken in the broth over rice, garnished with scallions.
