Caramelised Soy Chicken in Garlic Ginger Broth with Rice

A delicious and easy recipe for Caramelised Soy Chicken served in a flavorful Garlic Ginger Broth with Rice.

  • 4 pieces chicken thighs
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 2 cups chicken broth
  • 1 tablespoon grated ginger
  • 3 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 cup rice
  • 2 cups water
  • 1 tablespoon scallions, chopped

Instructions

  1. In a bowl, marinate the chicken thighs with soy sauce and brown sugar for at least 30 minutes.
  2. In a pot, heat oil over medium heat and sauté garlic and ginger until fragrant.
  3. Add the marinated chicken and sear on both sides until golden brown.
  4. Pour in chicken broth and bring to a boil, then reduce heat and simmer for 25 minutes.
  5. While the chicken cooks, rinse the rice under cold water. In another pot, combine rice and water, bring to a boil, then cover and simmer for 18 minutes.
  6. Serve the chicken in the broth over rice, garnished with scallions.

Notes

  • For extra flavor, add vegetables like bok choy or carrots into the broth.
  • Adjust soy sauce to taste if you prefer a less salty dish.
