Ingredients

  • 2 large sweet potatoes
  • 4 eggs
  • 1 cup spinach
  • 1/2 cup feta cheese
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and slice the sweet potatoes into rounds.
  3. Toss the sweet potatoes in olive oil, salt, and pepper.
  4. Spread them on a baking sheet and roast for 25-30 minutes.
  5. In the last 5 minutes, crack eggs over the roasted sweet potatoes.
  6. Remove from oven and sprinkle with spinach and feta.
