Blueberry–Lemon Curd Tart

  • ½ cup unsalted butter, softened
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 2 tablespoons cold water
  • 2 cups fresh blueberries
  • ¾ cup granulated sugar
  • ⅓ cup fresh lemon juice
  • 3 large eggs
  • ¼ cup unsalted butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, and butter until crumbly. Add egg yolk and cold water, mix until a dough forms.
  3. Press the dough into a tart pan and bake for 15-20 minutes until golden.
  4. In a saucepan, combine blueberries, sugar, and lemon juice. Cook over medium heat until blueberries burst.
  5. In a bowl, whisk eggs, then slowly add the blueberry mixture. Cook until thick.
  6. Pour the lemon curd over the baked crust and refrigerate for 2 hours before serving.
