  • 1 pound beef stew meat
  • 4 slices turkey bacon
  • 1 cup barley
  • 4 cups beef broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups water

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add the beef stew meat to the pot and brown on all sides.
  3. Stir in the onion, carrots, celery, and garlic, cooking until softened.
  4. Pour in the beef broth and water, then add the barley, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  6. Before serving, crumble the cooked turkey bacon on top.
