- 1 pound beef stew meat
- 4 slices turkey bacon
- 1 cup barley
- 4 cups beef broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups water
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- Add the beef stew meat to the pot and brown on all sides.
- Stir in the onion, carrots, celery, and garlic, cooking until softened.
- Pour in the beef broth and water, then add the barley, thyme, salt, and pepper.
