  • 1/3 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups whole wheat flour
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large mixing bowl, mix together the grated zucchini, mashed bananas, honey or maple syrup, melted coconut oil, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the baking soda, baking powder, salt, and cinnamon.
  4. Add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
  5. Gently fold in the whole wheat flour and chopped walnuts if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
